First step is to roughly chop your cauliflower using a knife, you can use the florets only if you wish, one medium size cauliflower should be enough to yield about 5 cups of rice.
Second step toss those peices if cauliflower in your food processor and get them to rice or coscos size pieces. In a large skillet, spray a nonstick spray and cook your cauliflower for 8 minutes with regular stirring, and there you go, you have your cauliflower rice.
