This lovely desert has it all, it is healthy, low in fat, low in sugar, very nutritious, easy and not costly, what is better. It is suitable for dieters, diabetes patients and you can even give it to your kids for a light snack in school, because it contains oats, it will give a slow boost in the energy that can keep you the whole day full and energetic untill it is dinner time, so go on try those delicious cookies and let us know how you found them?
Three large ripe bananas.
One cup mixed dried fruits (dates, apricot, raisins, fig) chopped and pitted.
Two and half cup rolled oats.
One teaspoon vanilla extract.
1/3 cup vegetable oil.
1/3 cup honey.
– How To Prepare.
– Before you start get your oven preheated to 350F degrees (175 C degrees).
– In a large bowl mash up your banana with a fork, add the dried fruits in there you can also add chopped nuts if you desire to increase the health benefit, mix the honey, oil and vanilla with the mixture and let it sit for about 15 minutes.
– With an ice cream scoop drop small scoops on an ungreased cooking sheet, pat with wet finger tips gently.
– Back for twenty minutes in your preheated oven and keep an eye on your cookies as they may start browning before the twenty minutes complete then move allow them to cool.
Note/ Honey can be avoided in this recipe it will still have a natural sweet taste, just use two cups of rolled oats instead of two and half if you are taking out the honey.
You can substitute the oil with unsweetened apple sauce for a healthier and lower calories recipe.
